Eau de Vie was the brainchild of Nicholas Stanley, a man with distinguished experience in the wine and restaurant sectors.

While trying to find a better solution for making quality drinking water available to restaurants he was struck by the evocative phrase ‘Eau de Vie’ – Water of Life. At the time a public debate was raging about the ecological wastefulness of shipping fancy bottled water over great distances. Nicholas knew that creating a system that used properly filtered, chilled and optionally carbonated mains water was the first part of the ideal solution.

The second part was developing stylish, reusable glass bottles and glassware to rival the appeal of ‘designer’ – style bottled water. Lastly he realised that the system and the brand, now registered as Eau de Vie, would need to be embraced by top restaurants.

The legendary Quo Vadis in London’s Soho was the first to install the Eau de Vie system which is now fast becoming the natural choice for the leading names in the hospitality sector – an ecologically sound, inexpensive, elegant and highly palatable water that excels even in the company of the finest wines.
